Delicious and easy-to-make tequeños made with ripe bananas and no wheat flour. Boil the bananas, make a puree, combine with corn flour and cheese, shape into sticks with cheese inside, and cook in an air fryer or oven.
Wash the bananas well and boil them with the skin in a pot.
Melt 1 tablespoon of papelón with 1 tablespoon of water until it forms a syrup.
When the bananas are soft, mash them while still warm in a bowl.
Add 1 cup of corn flour, 1 cup of cheese, 1 tablespoon of papelón, 1 teaspoon of syrup, and 1 teaspoon of anise seeds to the mashed bananas and knead.
If needed, add more water or flour to adjust the dough consistency.
Shape into sticks, creating a pocket for cheese before sealing them.
Cook in an air fryer for 20 minutes at 390°F or place on a tray and bake in the oven.
