An easy and delicious recipe for making quesillo or flan, perfect for sharing with family this weekend. This dessert combines eggs, sweetener, almond milk, and vanilla essence to create a smooth and rich custard, topped with homemade caramel.
Place half of the sweetener in a pot with water and a few drops of vanilla. Cook without stirring until it caramelizes, but do not let it thicken.
In a blender, mix the eggs, milk, sweetener, coffee, vanilla, and rum if using.
Beat the eggs with the sweetener and vanilla in the blender.
Heat the milk and, when it starts to boil, remove it from the heat and slowly add the egg mixture, stirring well until it thickens into a custard.
Fill baking molds with caramel at the bottom. You can use a quesillera or metal/silicon cupcake molds.
Pour the flan mixture over the caramel.
Place a tray filled halfway with water in the oven, and put the flan molds inside. The water should cover half the height of the flan molds. Cover with aluminum foil if the molds don't have a lid.
Bake at 200°C (400°F) for approximately 35 to 40 minutes until a knife inserted comes out clean.
Once ready, remove from the oven and let cool.
Refrigerate for at least 2 hours before serving.
