Delicious Venezuelan dish made with guacucos, a type of mollusk similar to a clam, prepared with garlic, parsley, white wine, and served with lime juice. A delightful beach-side treat!
Clean the guacucos well as they are often sandy; you can cook them with or without their shells. Soak them in saltwater and then wash them.
In a small pot, sauté the garlic without burning it.
 Add the guacucos and sauté.
 Add the white wine.
Season with salt and pepper. Serve sprinkled with parsley, lemon zest, and lemon juice. If you like, add some spiciness and accompany with casabe.
